dsm-firmenich, innovators in nutrition, health and beauty, will introduce its latest advances and ambitions to support a healthier, more delicious and sustainable food system at this year’s Food ingredients Europe (Fi Europe). A selection of next-generation solutions will be on display at booth 3.1 F62 in the beverage, baking, confectionery, cheese, plant-based, fresh dairy and savory categories – with an opportunity to sample the latest delicious prototypes. Visitors can also learn directly from dsm-firmenich’s experts at four speaking slots throughout the show, covering important trends in sugar reduction, health benefits, AI-powered fermentation and bakery.

Boosting nutrition in consumer favourites

Today’s consumers have a lot on their plate. Two in three are concerned about their health, two billion are deficient in essential vitamins and minerals and 40 % of adults worldwide are overweight,1 so there’s an urgent need for high-quality food and drink products that support people’s health and well-being.

Maaike Bruins, Lead Scientist Nutrition & Health and Martin Mei, Senior Director Health Benefits & Solutions, both from dsm-firmenich, will address these health concerns head-on with a not-to-be-missed presentation on November 19 at 1:30 PM. They will discuss the best approach to nourish the growing and aging population by adding more of the essential nutrients we need as well as reducing sugar, salt and saturated fats. Additionally, on November 20 at 11 AM, Judith van Peij Innovation Manager Baking & Confectionery, dsm-firmenich, will explore how innovative enzymes can be used to enhance whole wheat bread quality, from better dough stability to improved volume, helping to meet evolving consumer demand in taste, texture and health.

Visitors will be able to experience the dsm-firmenich team’s expertise in action through a range of healthy prototypes including a lactose-free Nutrimilk concept in strawberry and banana flavours – with no added sugars – and a recovery drink made with PeptoPro®, crafted to replenish and recharge.

Reducing sugar – without reducing flavour

There’s no single-ingredient replacement for sugar; if there were, the industry would be using it already. dsm-firmenich understands the real solution is far more nuanced if the industry is to captivate consumers with reduced sugar creations.

Francesc Puerto, Technical Sales Manager Sugar Reduction Europe, dsm-firmenich, will share a novel approach to reducing sugar in applications in a forward-thinking presentation on 19 November at 12 PM. The session will dive into the innovative solutions that can restore the full sensory experience in low-sugar products without compromising on vibrant tastes – for a healthier, tastier and more sustainable future in food and beverages. For those with a sweet tooth, dsm-firmenich has created chewy apricot-flavoured gummies and a flavourful BBQ sauce – both boasting reduced sugar formulations and an appealing taste profile.

Cutting-edge food science meets AI

Bringing together the latest taste, texture and health solutions, dsm-firmenich is highlighting its portfolio of all-in-one cultures developed using its leading AI-powered Dairy Culture Co-Creation platform. Claire Price, Innovation Manager Dairy, dsm-firmenich, will be sharing her R&D expertise on developing flavourful fresh fermented creations on November 19 at 11 AM. She will take to the stage to showcase how fermented milk manufacturers can use this technology to design cultures for dairy applications, sharing a case study based on a real-life scenario.

Taste is king: live cooking demo

People often put healthiness and tastiness in two separate boxes, but dsm-firmenich understands that the overlap is where the magic happens. After all, people only want to eat healthy food if it also tastes good. Demonstrating the potential of great taste without nutritional compromise, dsm-firmenich will host a smoke demonstration of mini ‘Frankfurters’ – in Frankfurt – with a side of sugar reduced ketchup for delegates to try.

All eyes on sustainability

Food production is estimated to be responsible for 25 % of global carbon dioxide emissions.2 Adopting more plant-based foods is a powerful step toward a more sustainable future. To meet the growing demand for plant-based options, dsm-firmenich will showcase its sustainable plant protein, Vertis™ CanolaPRO®, in a range of innovative applications, including a tortilla and breakfast cereals. Visitors can also try plant-based smoked ‘salmon’ with cream cheese and pulled ‘beef’ in tortillas for a satisfying plant-based experience. Visitors interested in helping consumers reduce food waste can also enjoy a smooth vanilla yogurt that lasts longer on the shelf while maintaining its taste and texture.

dsm-firmenich, a leading innovator in health, nutrition, and beauty, announces Peach+ as the 12th annual “Flavour of the Year” for 2024. Peach+ was inspired by PANTONE® 13-1023 Peach Fuzz, the 2024 Colour of the Year from PANTONE®, a global colour authority and provider of professional colour language standards and digital solutions for the design community. The selections were based on emerging signals in the cultural and consumer landscape where trends in kindness, community, goodness, and comfort have all been identified as having increasing relevancy. Empowering customers with insights into trends

The peach is one of the oldest cultivated fruits in the world, with a 4,000-year-old history that began in China and continues to this day. China is the world leader in peach production and exportation, with over 400 varietals under cultivation.

“Our research reveals that peach has many multifaceted meanings,” said Jeffrey Richard Schmoyer, VP of Human Insights for Taste, Texture & Health at dsm-firmenich. “And peach is incredibly emotional. While the peach has a long history, it also has an innovative future.”  According to Emotions 360, a proprietary dsm-firmenich consumer study that measures consumer emotions associated with ingredients, the peach is somewhat unique in that it has many innate qualities that contrast, such as being both indulgent and pampering, but also refreshing and revitalising, and youthful, but nostalgic.

Peach has been an evergreen fruit flavour in many categories for decades with a steady share of presence in innovations in most regions. Today, peach is growing in popularity in some regions and categories both as the primary tonality and in combination with others. The most prevalent areas of growth for peach new product development are carbonated soft drinks, nectars, candies, ready-to-drink teas, teas, flavoured alcoholic drinks, yogurt and fruit preparations, dairy drinks, juices containing peach, and fruit preserves. Other areas showing promise for growth are functional drinks and powdered soft drinks, as well as more savory opportunities for peach including side dishes, noodles, processed cheeses, and protein analogs. Peach in combination also spiked in favour of passion fruit plus peach, mango plus peach, peach plus tea, and apricot plus peach.

Christoph Goppelsroeder, former President and CEO of DSM Nutritional Products, was unanimously elected to Bühler Group’s Board of Directors on October 8, 2021.

Christoph Goppelsroeder (62) was unanimously elected to Bühler’s Board of Directors at an extraordinary general shareholders’ meeting on October 8, 2021. With his appointment, the Board of Directors is gaining an experienced executive who has played a crucial role in innovation and who puts customer needs first.

Swiss national Christoph Goppelsroeder began his career at The Boston Consulting Group. From 1994 to 2003, he held management positions at Roche Vitamins in Switzerland, Belgium, and the US. He joined DSM through their acquisition of Roche’s Vitamins business in 2003 when he co-led the integration of Roche Vitamins and acted as DSM Managing Board member from 2005 to 2006. From 2007 to 2012, he oversaw Syngenta’s Global Seed Care Division. In 2013, Christoph Goppelsroeder was appointed President and CEO of DSM Nutritional Products, DSM’s largest business, and Member of DSM’s Executive Committee. He led the division on a robust growth path, both organically as well as through acquisitions. He retired on April 1, 2021.

Royal DSM, a global science-based company in Nutrition, Health and Sustainable Living, announced that it has reached an agreement to acquire the flavour and fragrance (F&F) bio-based intermediates business of Amyris, Inc., which extends DSM’s offerings in Aroma Ingredients with bio-based ingredients for the flavour and fragrance and cosmetics industries.

DSM will acquire the business currently consisting of seven intermediate products (four already generating meaningful sales and EBITDA, two just launched and one under development) which will be added to DSM’s existing Personal Care & Aroma Ingredients activities.

DSM will acquire the business for an upfront consideration of US$ 150 million, which represents an estimated 15x EV/EBITDA 2021 multiple. Amyris will share in the EBITDA growth over the period 2021-2024 of certain of the activities (mainly the products just launched/ under development), receiving additional earn-outs equal to 9x the realized EBITDA in 2024, which is estimated to result in a total earn-out amount of US$ 100-150 million. DSM and Amyris will continue their R&D partnerships.

In recent years DSM acquired Amyris’ Farnesene business and technology for nutritional and F&F ingredients, as well as its Brotas (Brazil) biotechnology manufacturing facilities. DSM has been producing several F&F products for Amyris in this facility. Acquiring now the entire F&F business from Amyris is synergetic for DSM as it:

  • Further strengthens DSM’s globally-leading biotechnology base with F&F intermediate products and increases the scale of DSM’s biotechnology activities in nutritional ingredients;
  • Broadens DSM’s existing offerings in Aroma Ingredients with additional biotechnology-based products for DSM’s – already existing – F&F customer base;
  • Strengthens DSM’s sustainability profile further, as bio-based F&F ingredients offer additional alternatives to chemistry-based products as well as botanically-sourced ingredients.
